We’re flipping out over this Suja-infused Banana Bread
When you have a mild (& that’s putting it lightly) love of carbs and an insane
plant obsession, a good banana bread recipe can be a total game changer… and when you throw some Suja into the ingredient list…it’s game over. So, needless to say, we’re super stoked to share this Suja-infused banana bread goodness with you. Let us know if you love it just as much as we do!
Ingredients:
4 ripe bananas
2 eggs or an egg replacer (if this, use 2 tbsp. of the egg replacer + 4 tbsp. water)
1/2 cup Suja Berry Protein
1/3 cup honey (or a honey replacement)
2 tbsp. vanilla extract
1 tsp. baking soda
2 tsp. baking powder
1/2 tsp. salt
2 cups all purpose or whole wheat flour
Directions:
Preheat oven to 350˚F and prepare a 9×5 loaf pan with parchment paper and non-stick cooking spray.
In a large bowl, mash bananas with a fork. Add eggs, Suja Berry Protein, honey, coconut oil, vanilla extract, baking soda, baking powder, and salt. Stir to combine.
Add flour and stir until combined. Pour batter into prepared loaf pan and bake for 1 hour or until a toothpick comes out clean.
Let cool for 10 minutes and transfer to a cooling rack. Once completely cooled, cut into slices and enjoy!
