So...What Exactly is Kombucha?

Kombucha is a fermented beverage that is made of black tea or green tea and sugar. The sugar can be derived from various sources, such as cane sugar, fruit or honey. At Suja, all of our Kombucha drinks are fermented using organic cane sugar. The fermentation process of the tea is started by using sugar and some sort of “Symbiotic Colony of Bacteria and Yeast” or SCOBY. The SCOBY then eats the sugar, converting it into healthy organic acids for your body to consume.

What Does Kombucha Taste Like?

Kombucha has a rich and earthy flavor - but the truth is no Kombucha is created equally or tastes the same. Factors such as fermentation time, type of sugar used and strain of SCOBY will alter the flavor profile of any Kombucha.

Is Kombucha Alcoholic?

All naturally fermented foods and drinks have trace amounts of alcohol. While Kombucha does contain small trace amounts, the traces are typically too little to cause intoxication. All Suja Kombucha are certified non-alcoholic which by law means that a drink must contain less than 0.5% alcohol by volume. Suja is one of only a few kombucha producers with this certification (which means even your kiddos can enjoy our booch!).

Does Kombucha Contain Caffeine?

While caffeine is not added to Kombucha, it naturally contains some amounts of caffeine from the black or green tea it is brewed from. The fermentation process does reduce the tea’s natural caffeine content, however some remains after the process is complete. Bryan Riblett, our Chief Innovation Officer, weighed in on the subject. “The caffeine content found in Suja’s Kombucha is minimal; approx. 5mg of caffeine per 8oz serving.”
